It's one of the five "mother sauces" in French Cuisine. The other four are Béchamel, Espagnole, Veloute, and Tomato. ie: Everything else is based on them . Although I could never justify the raw egg thing in Hollandaise. I actually got a lower grade because I refused to eat it. As I told the chef/ instructor, "Sorry but I don't do well with Salmonella". Names would be etched onto the broken pieces of pottery. If the reason for the vote was to force someone into exile, and the votes added up to whatever the standard was at the time, the candidate got the boot.
