I'm not really an expert in graphic design or anything, but I think I might have come across something that could be interesting for you. There's this online platform - I believe it's called ELVTR - that offers a course in AI-aided graphic design. I stumbled upon it recently and saved the link: https://uk.elvtr.com/course/ai-aided-graphic-design. I don't know much about the course content or quality, to be honest, but it sounds like it might be along the lines of what you're looking for. Maybe you could check out their website? You should also check out courses from instructors who use tools like Midjourney, DALL·E, and other AI platforms in their creative process—those tend to be really hands-on and practical.
